Step 1

Prepare the fish in advance. Take the mackerel, rinse, remove the head, fins and tail with a sharp knife, leaving the middle of the carcass. Next, clean the inside of the fish and rinse again.

Step 2

Now you can start preparing the brine. An ordinary wide-sided saucepan is ideal for cooking. Pour water into a saucepan, put onion husks there, the required amount of salt, sugar, and tea leaves according to the recipe.

Cook the marinade on a hotplate for at least 20 minutes. During this time, the brine should boil twice. Leave the liquid to cool. When the marinade is at room temperature, you can shift the fish. Lay the mackerel in layers, pressing the pieces tightly together. Then shake the pan a little to distribute the marinade more evenly between the pieces.

Place the fish container in a cool place for 3-4 days. Do not forget to turn the layers once with clean hands during the day. The readiness of the mackerel is determined by the delicate, lightly salted taste and golden color of the skin.
