It is necessary

    • For the cake:
    • 200 g shortbread cookies;
    • 120 g butter;
    • 8 eggs;
    • 800 g unsalted cream cheese;
    • 50 ml heavy cream;
    • 150 g sugar;
    • 1 teaspoon lemon juice
    • For glaze:
    • 1/3 cup sugar
    • ½ glass of water;
    • 100 g of dark chocolate;
    • 1 tablespoon butter
    • 1 teaspoon of brandy.

Instructions

Step 1

Grind the cookies in a blender or crush. It should be like flour. Melt the butter in a water bath and pour into the crushed biscuits. Mix everything thoroughly until the mass becomes homogeneous and thick.

Step 2

Grease a baking dish with vegetable oil and pour the prepared mass into it. Smooth it out with your hands and tamp it thoroughly. The surface should be flat, without bumps or dents.

Step 3

Whisk the cream cheese and sugar with a blender or mixer. When the mass becomes homogeneous, add the eggs one at a time, without stopping to beat. Then gradually pour the cream into the mixture. At the end of the whisk, add some lemon juice to the mixture.

Step 4

Pour the cheese and egg mixture into a baking dish over the cookie crust. Smooth out the top layer with a wide knife. Place the cake in an oven preheated to 130 degrees.

Step 5

Leave the cheesecake in the oven for 60-90 minutes depending on the height of the cake, the higher it is, the longer it will take to bake.

Make the chocolate icing while the cake is cooking. Pour sugar into a saucepan and cover with water. Put the saucepan on the fire and bring the sugar mixture to a boil. Reduce heat and, stirring occasionally, simmer for 2-3 minutes. Then add dark chocolate, broken into pieces, to it. After the chocolate is completely dissolved, add cognac and butter to the mixture. Mix everything and remove from heat. Allow to cool slightly before using the glaze.

Step 7

Turn off the oven and leave the cake inside until cool. Then gently remove the cake from the pan and cover it with chocolate icing. Smooth out the icing and garnish with strawberries or cherries. Refrigerate the cheesecake for a few hours.
