  • - 2 heaped tablespoons of natural thick yogurt;
  • - 0.5 cups of warm water;
  • - 2 teaspoons of sugar;
  • - 1 tablespoon dry yeast;
  • - salt on the tip of a knife;
  • - 1/3 cup sunflower oil;
  • For meat filling:
  • - 300 g ground beef;
  • - onion;
  • - Bell pepper;
  • - chili pepper;
  • - vegetable oil;
  • - large tomato;
  • - salt.
  • For the cheese filling:
  • - 200 g feta cheese;
  • - 200 g of Turkish cheese Kashar (or Mozzarella);
  • - 1 egg;
  • - 3 large tomatoes (6 cherry tomatoes);
  • For the spinach filling:
  • - 150 g young spinach;
  • - 50 g feta cheese;
  • - 70 g pastrami (boiled pork);
  • - 0.5 cloves of garlic;
  • - vegetable oil;
  • - salt.

Instructions

Step 1

Prepare the dough. Break eggs into a deep container, add butter, yogurt, stir with a whisk. Pour in water, mix well. Add sugar, add yeast, salt and mix thoroughly with a whisk.

Step 2

Add the sifted flour to the egg and milk mixture. Knead a soft, rather sticky dough. It should be noted that you do not need to knead for a long time: as soon as the dough becomes homogeneous, sprinkle it with flour, cover with a towel and leave to come up for at least one hour.

Step 3

Make the meat filling. Chop the onion finely, fry in a large skillet in vegetable oil until golden brown. Put the minced meat in a frying pan and simmer it with onions over low heat for 7-8 minutes, stirring occasionally.

Step 4

Peel the stalks and seeds from the bell peppers and chop finely. Chop the chili, having previously freed it from the seeds. Add the prepared peppers to the minced meat and simmer for another 6-8 minutes.

Step 5

Make criss-cross notches on the skin of the tomato. Scald the tomato with boiling water, peel, cut into small cubes. Also put in minced meat and simmer for another 5 minutes. At the end, salt the minced meat, stir and remove from heat.

Step 6

For the cheese filling, coarsely grate the feta cheese and kashar cheese, mix with the egg. Cut the tomatoes into large slices. Toss the tomatoes with the cheese.

Step 7

To prepare the next filling, pour 4 tablespoons of olive oil into a saucepan, fry the spinach for 1-2 minutes. Then mix with grated feta cheese, thinly sliced pastrami, add chopped garlic, salt.

Step 8

Divide the finished dough into 6-9 parts. Form each part into a ball and stretch (roll) it on a floured surface into an oval layer 3-5 mm thick. Transfer to greased baking trays.

Step 9

Spread the different fillings on the dough sheets, leaving the edges free. Roll the dough over the filling and form into boats.

Step 10

Brush the dough with yolk diluted with water. Bake the pide in an oven preheated to 220 ° C for 15-20 minutes. Serve hot as a snack.
