Even from elementary and familiar from childhood products, you can prepare an unusual and refined dish. Try making a vegetable noodle casserole. It is prepared quickly, it looks very beautiful, and the taste will take you to a sunny, summer village in distant Italy.

It is necessary

    • 300 g ready-made noodles;
    • 3 tomatoes;
    • one medium carrot;
    • one yellow or green bell pepper;
    • 1 onion head;
    • 50 g parsley and basil;
    • 150 g parmesan;
    • 2 eggs.

Instructions

Step 1

Boil the noodles in salted water. To prevent it from sticking, add a couple of tablespoons of vegetable oil during cooking. Make sure that the noodles are not overcooked, it is better to let them be slightly undercooked.

Step 2

Cook the vegetables while the noodles are cooking. Peel and cut the carrots into thin strips. Free the bell peppers from seeds and stalks and cut into half rings. Cut the onion into thin half rings. Scald the tomatoes with boiling water and peel them off. Cut them into cubes. Chop the garlic cloves.

Step 3

Heat olive oil in a skillet and add butter. Pour the onions into the skillet and fry until translucent. Then add the carrots and peppers, stir and fry for a couple of minutes. Put the tomatoes in the pan and simmer them with the vegetables for 3-5 minutes. Season vegetables with salt and pepper. You can add herbal spices to taste. Add garlic last and remove from heat.

Step 4

Grate the cheese. Chop up the parsley and basil. Drain the noodles in a colander and return to the pot. Beat the eggs with a fork or kitchen whisk.

Step 5

Brush a baking dish with vegetable oil. Place a layer of noodles, pour half of the egg mixture on top of it, sprinkle with half of the grated Parmesan, and top with vegetables and herbs.

Step 6

Place the leftover noodles on top of the herb vegetables, add the egg mixture and cover the baking dish with foil. Place the casserole in an oven preheated to 200 degrees for 20 minutes. A few minutes before cooking, remove the foil and sprinkle the remaining cheese on the noodles. Place the casserole back in the oven and bake until golden brown on top.

Step 7

Garnish the vegetable noodle casserole with parsley and basil leaves. Serve hot.
