At the same time, it is not at all necessary to completely abandon hot dishes, it is enough to introduce more fresh vegetables and fruits into the diet. You can rediscover the taste of familiar foods by trying a raw vegetable stew.

- - tomatoes - 200 g;
- - sweet pepper - 100 g;
- - garlic - 1 - 2 cloves;
- - vegetable oil - 2 tablespoons;
- - parsley to taste;
- - lemon juice - 2 tablespoons;
- - sea salt - to taste;
- - salt - 1 tablespoon;
- - water - 1 l;
- - honey - 1 tsp.
Instructions
Step 1
First you need to peel and cut the eggplant into small cubes. Then, to remove the bitterness of this vegetable, put its pieces in a glass or enamel container, pour a tablespoon of salt and fill it with water. Leave the eggplant on the table for about half an hour. The water must be drained, and in order to remove the remaining salt and seeds, rinse the vegetable with running water.
Step 2
While the sliced eggplant is soaking in salted water, prepare the rest of the vegetables. Peel thin skins and seeds from tomatoes and peppers. Then cut the peeled fruits into small cubes. Immediately add finely chopped parsley and garlic passed through a special press or chopped on a fine grater into the mixture of vegetables.
Step 3
Put prepared eggplants in a mixture of tomatoes and peppers, salt vegetables and season with a mixture of vegetable oil, honey and lemon juice. Let the vegetables steep for 15 minutes and you can serve the dish on the table.
