It is necessary

  • Ingredients for the 25 by 30 centimeters mold:
  • For the cake:
  • - 300 g butter;
  • - 120 g icing sugar;
  • - 2 teaspoons of vanilla extract;
  • - yolk;
  • - 500 g flour;
  • - 400 g raspberry jam.
  • For glaze:
  • - 100 ml of water;
  • - 500 g of icing sugar;
  • - any cherry color food coloring.

Instructions

Step 1

Preheat the oven to 180C, cover the form with baking paper in two layers.

Step 2

In a large bowl, whisk room temperature butter, powdered sugar, vanilla extract and yolk. Sift flour into a bowl, add a pinch of salt. Mix the ingredients with a wooden spatula and then with your hands to make a crumbly shortbread dough.

Step 3

Put half of the dough in a mold and tamp it as tightly as possible. Distribute raspberry jam on top of the dough, stepping back 1 centimeter from the edges.

Step 4

Crumble the remaining dough over the jam with your hands - the layer should be the same thickness. At first, the second layer of dough will not seem very even, but during baking, the butter will melt and the layer will even out. We bake the cake for 35-40 minutes.

Step 5

When the cake is completely cool, we begin to prepare the icing. In a cup, mix the icing sugar, water and a small amount of dye. The glaze should turn out to be a delicate pinkish color. Fill the cake with glaze, drip randomly a few drops of dye and use a toothpick or a wooden skewer to make stains so that the pattern on the glaze resembles the texture of marble. We put the pie in the refrigerator overnight so that the icing is completely frozen.
