It is impossible to imagine a festive table without red caviar! Salmon caviar is a delicacy loved by many. Of course, buying ready-made caviar in the store is not a problem. But if you got fish with caviar, it is quite possible to cook caviar yourself. It is known that inside the fish, caviar is contained in the ovary - the film that forms the shell of the caviar. There are several ways to remove this film from the eggs.

Step 1

Break the shell with caviar into several pieces. If you got fish with ripe caviar, then such caviar is large and can be easily removed from the films. Carefully break each part of the yastyk with your hands. Use your fingers to separate the eggs from the individual pieces of the film-shell. You can gently rub the caviar through a mesh or colander with suitable holes.

Step 2

If you cannot free the caviar from the films with your hands, use the hot water method. Boil water, add salt (per 1 liter of water 3 tablespoons of salt) and slightly cool the resulting brine. Pour hot water over the wrapped caviar, cover and leave for about 20 minutes. During this time, the caviar shell will turn gray and crumbly. Use a fork or, much more effectively, a whisk. Gently, but vigorously stir the caviar in the brine, trying to break the film, but not crush the eggs. Move the whisk to one side, while the water will curl up with the funnel, and the film will wrap around the whisk.

Step 3

After the main part of the films has been cleaned, carefully fold the caviar onto a sieve and let the water drain. Then put the caviar in portions on a paper towel or napkin, cover the top with a towel and gently, trying not to crush, wipe the eggs. The remnants of the film will remain on the towel, and the caviar will become dry and crumbly - grainy.
