Step 1
Wash the strawberries, remove the stalks, set aside a few berries, chop the rest to a puree consistency.

Rinse the mint and, shaking off the water, finely chop. Beat the yolks with powdered sugar in a hot water bath. Remove from heat and beat for another 5 minutes, add chopped mint and strawberry puree, mix everything. Beat the cream until foamy.

Serves 4: 600 g strawberries 6 sprigs of mint 5 yolks 125 g icing sugar 40 ml cream

Remove from heat and beat for another 5 minutes, add chopped mint and strawberry puree, mix everything. Beat the cream until foamy. Combine with yolk-strawberry mass. Put the resulting cream in a rectangular shape lined with cling film (approx. 1.5 l) and refrigerate for 5 hours.
Step 3
Before serving, remove the parfait from the refrigerator, tip it onto a dish, remove the cling film. Cut the parfait into pieces. If desired, decorate the dessert with strawberries and mint leaves.
