Step 1

Soften ice cream. Better to take vanilla, but you can safely use a regular ice cream or crème brulee. Leave the ice cream at room temperature for 10-15 minutes.

Grind the gingerbread cookies into fairly fine crumbs using a blender or meat grinder. Place it in a bowl.

Melt the butter and add to the cookies. Mix everything thoroughly. The mixture should not come out too thick and at the same time too crumbly. Put the mass in a mold, which must first be generously greased with butter.

Tamp the mixture into a mold and place in the freezer for 20 minutes. During this time, the base for the future cake will set well.

Cut strawberries into small pieces. At the same time, leave a few berries intact to decorate the cake. Chop the figs in the same way. Combine it and the strawberry chunks with the melted ice cream. Pour this mixture into a cookie cutter and flatten the top.

Step 6

Decorate the cake with the remaining strawberries and place in the freezer for 3-8 hours until the ice cream has solidified. Before serving the strawberry ice cream cake, remove it from the freezer and sprinkle with pistachios. Keep it at room temperature for about 10 minutes.
