- For strawberry mousse:
- - 500 g strawberries (fresh or frozen);
- - freshly squeezed juice of half a small lemon;
- - 1/3 cup sugar;
- - 4 teaspoons of gelatin powder (12 g);
- - 300 ml heavy cream (36%);
- - half a pack of oblong (round) cookies;
- For chocolate cream:
- - 100 ml of whipped cream (36%);
- - 100 g of dark (milk) chocolate;
Instructions
Step 1
Prepare the dough: beat the whites, add granulated sugar, egg yolks in several steps. Then add sifted flour, cocoa, baking powder, grated chocolate. Stir gently to prevent foam from falling.
Pour into a mold covered with parchment paper, align. Bake for about 12-15 minutes at 180 ° C. Cool the cake.
Step 2
Prepare a round hemisphere-shaped container with a diameter of about 20-22 cm and a height of 10 cm (you can use a colander), covered with aluminum foil.
Cut the chocolate cake into smaller pieces (3-4 pieces), arrange them carefully, form a semicircular shape, the pieces should not protrude beyond the edges of the mold.
Step 3
Prepare strawberry mousse: put strawberries (frozen without defrosting), lemon juice, sugar in a saucepan. Heat, stirring occasionally, until the sugar is completely dissolved. Mix with a blender in puree.
Soak gelatin in cold water, let it swell. Allow to dissolve completely in a water bath or in a microwave oven, cool at room temperature.
Whipped chilled cream, gradually add to the strawberry puree, stir gently. Pour the finished strawberry mousse over the chocolate cake. Put cookies on top. Refrigerate for several hours, preferably overnight.

Prepare the chocolate cream: In a small saucepan, bring the whipped cream to a near boil. Remove the pan from heat, add the chocolate wedges, let stand for 2 minutes, then stir to form a smooth chocolate cream.
Put the chilled strawberry cake on a platter, remove the aluminum foil, pour chocolate cream on top, garnish with fresh strawberries.
