Sort out, rinse the prunes in running water, put them in a bowl so deep that the prunes take up no more than ¾ of its volume. Pour boiling water over the prunes, let it swell for 5-8 minutes. Drain the water, carefully remove the seeds from the dried fruit, put in a saucepan, pour in a little cold water and cook over low heat for 8-10 minutes.

Drain the broth (you can drink it). Pass the boiled prunes through a fine-grated meat grinder, or beat with a blender, or rub through a sieve. Add sugar, boil until sugar is completely dissolved.

Dessert with dried apricots and prunes

Sort out the prunes, rinse thoroughly with cold water, dry, put in a deep bowl, if the prunes are hard, then pour boiling water for 3-5 minutes so that it swells a little.

Step 4

Drain the water, carefully remove the bone so as not to damage the dried fruit (otherwise, during cooking, part of the pulp will spread in the water and it will not be possible to catch it to make mashed potatoes), put in a saucepan with a little cold water, bring to a boil and cook for another 5 minutes, so that the water darkens and the prunes are boiled. Remove the prunes with a slotted spoon, pass through a meat grinder with a fine grid, if necessary, then twice.

Take a soft dried apricot, preferably bright orange or sunny yellow, rinse very thoroughly, separate the spoiled one, boil it properly. Throw in a colander, mince or wipe through a fine mesh sieve. Place the dried apricot puree on top of the prune puree and mix lightly with a blender to form a striped mixture.

Step 6

Chill the cream in the refrigerator, pour into a deep dish (saucepan, beating glass), filling it by a third. Place the cream dish in a container of ice or cold water, beat, gradually increasing the speed, until a thick, fluffy and stable foam forms. Continue whisking and gradually add the powdered sugar.

Step 7

Gently place the mashed prunes and dried apricots on the bowls, put the whipped cream in a pastry bag (or a plastic bag with a cut off corner) and squeeze the cream onto the mashed potatoes.
