Prune tklapi is a Georgian marshmallow that is eaten both as an independent delicacy and used to prepare other dishes. I suggest you try this sweetness.
It is necessary
- - large prunes with seeds - 3 kg;
- - sugar - 3-4 tablespoons.
Instructions
Step 1
After removing the pits from the prunes, place the remaining pulp in a suitable sized saucepan. Pour the dried fruit with enough water so that it completely covers them. In this form, place the prunes on the stove and cook over very low heat. When the water boils, cook the mass for another half an hour, stirring it constantly with a wooden spoon.
Step 2
After a predetermined period of time, strain the prunes through a colander. Put the strained broth in the refrigerator, and chop the boiled dried fruits, passing through a sieve.
Step 3
Add granulated sugar to the mass of prunes. Mix everything properly, after which the resulting mixture, transferring it to a bowl with a thick bottom, put it on the stove. Bring it to a boil first, then cook for another 5 minutes.
Step 4
After wetting a wide enough board of wood with water, spread the plum mass on it. Spread it carefully over the entire surface so that the thickness of the layer does not exceed 1 millimeter. This procedure is more convenient to do if you wet your hands with water first. In this form, remove the cloths to a warm, ventilated area and leave to dry. When the top of the marshmallow is dry, turn over and dry the bottom.
Step 5
It may take 2 days to 2 weeks for the food to dry completely. It all depends on the air temperature. When this happens, grease the treat with the remaining broth and roll it up like a tube. The prune tklapi is ready! Store it in a fairly dark place.
