Our ancestors knew exactly what carols symbolized - unleavened pies with fillings, which were traditionally baked at Christmas. The modern generation has lost the deep knowledge of their ancestors, but the tradition of baking carols lives on today. The filling for making these products from unleavened dough can be very diverse, and the recipe is very simple.

Carols are pies made of unleavened dough with various fillings. The tradition of baking them dates back to ancient times. The shape of carols can be not only round, but also polygonal. Unlike ordinary pies, carols are baked open, and therefore the table immediately becomes festive from the sight of different fillings.

Main components for dough and fillings

The dough for baking Christmas carols includes eight components:

  • necessarily rye flour or a mixture of rye and wheat flour;
  • water, milk, yogurt, sour cream, salt and filling.

The following products can serve as a filling:

  • mashed potatoes;
  • grated cheese;
  • stewed mushrooms with onions;
  • boiled mashed beets with cranberries and sugar.

Dough preparation

Water, salt, butter, sour cream, yogurt, milk (in any ratio, at your own discretion) are added to the sifted rye flour. Then they knead the dough, put it in the refrigerator for half an hour.

From the chilled dough, you need to roll a small tourniquet, cut it into even pieces, which in turn are rolled into flat cakes. Place the filling in the middle of the flatbread and pinch the edges. The shape of the carols can be different, it depends on the imagination of the culinary specialist. The filling for the products must be chilled, otherwise the so-called "hardening" will turn out.

Fresh pies are baked in a preheated oven at a temperature of 180-200 degrees. To make the crust of the finished Christmas carols soft, grease the surface of the products with a piece of butter.
