This bean soup can be made very quickly and easily. And it does not require expensive or rare products, and you can make noodles at home, with your own hands.
For homemade bean soup you will need: 500 g beans, 300 g bacon (ham or smoked pork), 300 g potatoes, 100 g carrots, 50 g leeks, herbs (parsley, celery, dill) to taste, dried red pepper, garlic, salt - to taste, noodles (200-500 g optional).
Soup preparation:
1. Boil the beans, drain the water.
2. Peel and chop potatoes, carrots, leeks.
3. Put vegetables to the beans in a saucepan, fill with water and cook until tender.
4. Chop bacon (or ham, smoked pork, you can also sausage, if there is nothing else), add to vegetables. Put the noodles there, salt to taste, cook everything together until tender, and then season with garlic.
If you have the time and desire, make the noodles yourself at home.
For the simplest noodles, you need only 250 g of flour, 1 egg, about 100 ml of water, salt.
Cooking homemade noodles: mix the noodle products, but add a little water so that the dough is dense and elastic enough. Roll out a thin layer of dough, cut it with a sharp knife into narrow strips and dry a little.

Serve the soup sprinkled with fresh herbs.
