Ingredients:

  • Fresh pitted or frozen cherries - 300 g;
  • Milk with a fat content of 6% - 500 ml;
  • Fat cream - 500 ml;
  • Powdered milk - 70 g;
  • Powdered sugar - 80 g;
  • Cinnamon - 20 g;
  • Sugar - 200 g;
  • Cognac or brandy - 1, 5 tablespoons;
  • Vanilla sugar - 2 tablespoons;
  • Chocolate bar;
  • Cornstarch - 2 tablespoons
  • Cocoa powder - 1 teaspoon;
  • A pinch of fine salt.

Preparation:

  1. You need to defrost the cherries and drain the juice from it. If the cherries are fresh, wash them and remove the seeds. Pour the prepared cherries with cognac or brandy. And put a bowl of cognac berries in the refrigerator for the whole night.
  2. Then take a stewpan, preferably with a thick bottom, and mix sugar, milk powder, salt, cocoa powder and a pinch of salt in it. Pour most of the milk into the mixture (leave 50 ml). Bring to a boil over low heat.
  3. Take a separate plate and mix the starch and 50 ml of milk in it. Pour starch into boiling milk liquid in a thin stream. Cook the resulting mass for several minutes. The mixture should acquire the consistency of a thick jelly, add cinnamon mixed with powdered sugar to it. The resulting ice cream mixture must be completely cooled, stirring, and strain.
  4. Chop the cherries in a blender, or you can mash them slightly with a fork, then pieces of berries will be felt in the ice cream. Now you need to whip the chilled cream until fluffy peaks.
  5. Gently whisk the milk mixture with the cream. Add the cherry puree to them and stir well again. Pour the resulting mixture into a bowl and remove to freeze in the freezer.
  6. Take out the mixture after half an hour and add the chopped chocolate into small pieces, mix. Put the mixture back in the refrigerator.
  7. Ice cream should be frozen in the refrigerator for 5 hours. In this case, for the first two hours, it must be intensively mixed with a fork every half hour.
