Beat the whites until a firm foam, add 50 g of granulated sugar and beat until the sugar is completely dissolved. Combine whites and yolks, add flour and mix everything well until smooth.
Step 2
Divide the dough into 2 pieces. Put one part of the dough into a bag, cut off a corner and put the fingers on baking paper. Sprinkle them with powdered sugar. Transfer the rest of the dough to a baking dish lined with baking paper.
Step 3
Put in the oven, preheated to 180 degrees, and bake the fingers for 15-17 minutes, and the biscuit for 30-35 minutes.

In a blender, beat 300 g of strawberries, add granulated sugar and stir. Dissolve gelatin in hot water. Add the gelatin to the strawberry puree and let thicken for about 20-25 minutes.
Step 5
Cut 100 g strawberries into slices. Whisk in the cream and mix with the strawberries and strawberry puree until smooth, leave to thicken for 30-35 minutes.
Step 6
Make vanilla syrup. Dissolve 3 tablespoons. vanilla sugar in water. Saturate the fingers and biscuit with syrup. Place the strawberry mousse over the sponge cake and refrigerate for 45-60 minutes. Transfer the sponge cake to a plate, place the "fingers" around the edges and tie with a ribbon. Garnish with strawberries.
