Rinse the fish fillets and pat dry with paper towels. Sprinkle with salt, pepper, thyme and chopped onions. Leave it on for 2 hours.

Boil water in a saucepan. Remove the onion from the fish and put the fish in boiling water. Add herbs and cook for 3 minutes.

Drain the fish and add the previously set aside onions. Leave the fish on for 10 minutes.

Pour a liter of water into a saucepan, put peppercorns and bay leaves. Bring to a boil.

Put wine vinegar, sugar, salt in water and mix thoroughly. Bring to a boil and turn off heat.
