Salad recipe with smoked sausage and fried vegetables

Ingredients:

- 200 g of Odessa or Krakow sausage;

- 200 g of chopped green beans;

- 1 tomato weighing 150 g;

- 100 g (half) of red or orange bell pepper;

- 2 green lettuce leaves;

- 20 g each green onion and arugula;

- 4 tablespoons vegetable oil;

- salt.

If you have frozen beans, then you do not need to cook them. Put it in a skillet, simmer for 15 minutes over medium heat, and then brown over high.

Boil the beans in salted water for 15 minutes, then transfer them to a colander. Heat 2 tablespoons in a skillet. vegetable oil and fry the green pods in it over high heat along with the cubes of bell pepper. Put the vegetables and fry the tomato quarters in the same oil, but just a little so that they don't turn into porridge.

Peel the sausage and cut into transverse circles 1, 5-2 cm thick. Tear the lettuce leaves with your hands, chop the green onions. Combine all prepared salad ingredients and rucola leaves in one bowl. Drizzle with the remaining vegetable oil and sprinkle with a pinch of salt.

Ingredients:

- 150 g salami;

- 2 cucumbers;

- 150 g of Chinese salad or young white cabbage;

- 1 bell pepper;

- 20 g of dill;

- 3 tbsp. sour cream;

- 1 tbsp. French mustard;

- a pinch of ground black pepper;

- salt.

Chop salad or cabbage thinly. Cut the cucumbers, bell peppers and salami into strips. Chop the dill greens after cutting off the thick stems. Put everything in a salad bowl, add a little salt, remembering that there is already salt in the smoked sausage. Dress up with sour cream, mustard, and black pepper. Whisk the mixture and pour over the salad. Mix everything well.

Smoked sausage salad with beans and apple

Ingredients:

- 300 g of smoked sausage with large fat;

- 1/2 tbsp. red beans;

- 2 apples of a green variety (for example, granny smith or golden);

- 1 red onion;

- 3 tbsp. vinegar;

- 3 tbsp. mayonnaise;

- salt.

In the absence of time and desire to cook dry beans, it can be replaced with canned beans, but the taste will change slightly from this.

Soak the beans in cold water for 2 hours. Place the beans in a colander and cook until tender (soft). Marinate half rings of onion in vinegar for 10 minutes. Cut the sausage and apples into strips. Mix all the ingredients of the salad, season with mayonnaise and let it brew properly. Then add salt if necessary.
