It is suitable for those who follow the figure, since it contains vegetable oil and the sugar rate can be adjusted at your discretion.   • Products:
  • 300 grams of wheat flour
  • 150 ml of kefir or yogurt
  • 120 ml odorless vegetable oil
  • 1-2 tablespoons lemon juice (can be replaced with dried rind, flavorings)
  • 180 grams of sugar
  • 20 grams of sugar, sprinkled on top
  • apricots about 400 grams
  • 5-7 grams of baking powder or baking soda
  • 3 eggs
  • icing sugar, cinnamon for sprinkling

Instructions

Step 1

Prepare food and dishes. Food should be at room temperature. Vegetable oil is best taken odorless. Prepare apricots. To do this, they are washed, the bone is removed and divided into slices. Here is the most interesting thing: you can leave the slices intact and among the dough they will look like suns, or you can cut each apricot slice into pieces and lay them in rows. This is not for everybody, but in the latter case, it will be easiest to cut the finished biscuit into portioned pieces.

Step 2

In a bowl, mix dry ingredients together: flour, baking soda or baking powder, sugar, zest. Emulsify kefir with vegetable oil and eggs separately. Stir with a spoon, the dough rises without a mixer. Combine dry and wet ingredients. Sweep thoroughly.

Step 3

Pour the resulting dough onto a baking sheet and smooth, not forgetting about the edges and an even layer. Next, spread the apricots over the dough, with their backs facing down. It is better to press the fruits a little, for stability. The raised dough will not let them drown completely. Sprinkle the fruit evenly with a spoonful of sugar on top.

Step 4

It is recommended to put the biscuit in a preheated oven. You need to bake for 35 minutes at a temperature of 180-200 degrees. After baking, let the cake cool in the pan and take heed of the edges of the baking paper.

Slightly cooled biscuit with apricots is sprinkled with powdered sugar through a small sieve and cut into portions. Bon Appetit!
