The unusual chickpea salad turns out to be simple and refreshing, mint gives the dish aroma, and the beneficial properties are due to the traditional Mediterranean spices - onions, garlic, olive oil and lemon juice.

- Ingredients for 4 servings:
- - mutton peas (chickpeas) - 200 g;
- - fresh mint - a bunch;
- - 2 lemons;
- - 2 onions;
- - pepper and salt to taste;
- - 4 tablespoons of olive oil;
- - 4 eggs;
- - 7 cloves of garlic (or to taste).
Instructions
Step 1
Pour dried chickpeas with plenty of water and leave overnight, the next day rinse well with running water. You can use ready-made chickpeas, as a rule, they are sold in large supermarkets, but a more tasty and healthy dish will turn out only when using dried lamb peas.
Step 2
Pour water into a large saucepan, put the chickpeas into it, add a teaspoon of salt. We clean 2 onions, cut each into 4 parts, add to the chickpeas. Bring the water in a saucepan to a boil and cook the chickpeas until tender over medium heat (this can take 1 to 3 hours, depending on the brand of chickpeas).
Step 3
Strain the finished chickpeas, leaving a little water in which it was cooked. We wash the chickpeas with cold water. Squeeze the juice of two lemons, pour the chickpeas over them, salt and pepper to taste, pour with olive oil and set aside.
Step 4
Boil hard-boiled eggs, at this time wash the mint, dry with a napkin and chop very finely. We clean the garlic and also chop as finely as possible.
Step 5
Add the garlic and mint to the chickpea bowl, gently mix all the ingredients. Pour a small amount of broth, which remained after boiling the chickpeas. We clean the boiled eggs, cut each in half and put on top of the salad. The traditional Mediterranean dish is ready!
