  • For four servings:
  • - 250 g of wheat flour;
  • - 150 g butter;
  • - 135 g of sugar;
  • - 50 g of cookies and almonds;
  • - 5 eggs;
  • - 6 fresh peaches or a jar of peaches in syrup;
  • - 1 lemon;
  • - sea salt, powdered sugar.

Instructions

Step 1

Cut 100 g of butter into small cubes, add it to 200 g of flour, grind until crumbly, add sea salt, 85 g of sugar, 3 egg yolks (we do not need proteins), zest from 1 lemon, knead an elastic dough. Form a log from the finished dough, put it on the foil, wrap it, put it in the refrigerator for an hour.

Grease the mold with butter, sprinkle with flour. Cut the dough into thin strips, place on the bottom of the mold, put it back in the refrigerator.

Step 3

Grind 50 g sugar and 50 g almonds in a food processor, add 50 g flour and the same amount of chopped butter. Add 1 whole chicken egg and 1 yolk, stir until creamy. Add 50 g of crushed amaretti cookies, stir, refrigerate. The pie filling is ready.

Step 4

Dip the peaches in hot water, then in cold water, remove the skin, remove the seeds. With canned peaches, this procedure, of course, is not required. Add 2 tablespoons of peaches. tablespoons of sugar, leave for 5 minutes.

Spread the filling over the dough, place the peach halves on top, cut down, sprinkle with 2 tbsp. spoons of almond flakes.

Step 6

Bake the pie for 20-25 minutes at 180 degrees. Sprinkle the finished almond peach pie with icing sugar. It can be served both warm and cold.
