It is very important to cook seafood properly because it is so easy to overexpose. It is even more important to choose a delicate gravy for them, which will emphasize the dignity of the valuable gift of the sea and give the dish a completeness. You will be surprised how the shrimp taste is transformed when dipped in a rich sauce.
Use a simple recipe to make a rich shrimp sauce. You will need:
- 100 g of 20% sour cream and mayonnaise;
- 20 g of parsley and dill;
- 1 pickled or pickled cucumber;
- 1 sweet pepper;
- 2 cloves of garlic;
- 50 ml of lemon juice;
- 1 tsp ground white pepper.
Peel the bell pepper, peel off the garlic cloves, cut off the tough stems of dill, parsley and cucumber "butt". Throw away the debris, chop the rest very finely with a sharp knife. Mix sour cream with mayonnaise and lemon juice and add vegetable crumbs. Pepper the sauce, mix well and refrigerate for 1 hour. Serve in a separate bowl.
Try the savory orange shrimp sauce. You will need:
- 2 large sweet oranges;
- 100 ml of dry white vermouth;
- 50 g of honey;
- 40 g of butter;
- 2 cm of ginger root;
- 20 ml of soy sauce;
- 15 g of basil;
- 1/2 tsp salt.
Too thin, in your opinion, can be thickened by adding a tablespoon of potato or cornstarch to it.
Pour boiling water over one orange, then wipe it dry and grate the colored part of the skin on a fine grater. Melt the butter in a saucepan or deep skillet and pour in the juice from both citrus fruits. Stir in chopped ginger root, 1 tsp. zest, plus vermouth, soy sauce, honey, chopped basil, and salt. Boil the sauce for 5-7 minutes over medium heat, pour over the cooked shrimps and hold them like this for 20 minutes before serving.
Make a delicate yoghurt sauce for the shrimp. You will need:
- 100 g of yoghurt without additives;
- 1 small cucumber;
- 1 small chili pepper or half a large;
- 20 ml lemon juice;
- 10 g each mint and cilantro;
- 1 tbsp. dried or grated ginger;
- 1/3 tsp each sugar and cumin;
- 1/2 tsp salt.
Place the greens, the seedless cucumber and chili peppers, ginger and yogurt into a bowl of a blender or food processor, add lemon juice, cumin, sugar and salt. Pound all food until smooth. Serve the sauce separately or cover the shrimp immediately.
Try shrimp with cream cheese sauce. You will need:
- 400 ml of 2.5 milk;
- 50 g each of butter and hard cheese;
- 40 g flour;
- 1/4 tsp nutmeg;
- 1/3 tsp ground black pepper;
- 3/4 tsp salt.
For the sauce, take cheese with a mild flavor so as not to overpower the bouquet of the whole dish.
Preheat a saucepan, toss in a piece of butter and let it melt, then add flour and stir quickly so that there are no lumps. Fry it for a minute until light brown, then add milk in a thin stream and grated cheese. Season the sauce with spices and salt and simmer until thickened to the desired consistency. Carry it immediately with the shrimp on the table until it cools.
Get a new taste of shrimp by dipping them in hot tomato sauce. You will need:
- 150 ml of boiled water;
- 2 bitter peppers;
- 80 g of honey;
- 60 g ketchup;
- 50 g adjika;
- 30 ml of soy sauce.
Peel the seeds from the peppers and grate or crush in a mortar. Combine them with honey, ketchup, adjika, soy sauce and dilute with warm water.
