Instructions

Step 1

Cut the pork fillet into even pieces. They should be about the size of a matchbox. The more correct the shape of the pieces, the easier it will be to string them onto a skewer. Medium fat meat is preferred, so use the neck of the ridge.

Step 2

Prepare the marinade in a separate bowl. Mix equal amounts of ketchup and mayonnaise. To add spice, you can add a few finely chopped garlic cloves.

Chop the onion into rings and mix it with the meat, do not forget to salt. The amount of salt depends solely on your taste.

Step 4

Combine the meat and the resulting marinade. To make the kebabs juicy, let the mixture stand for 30 minutes. This time will be enough for the meat to retain its properties and at the same time become soft.

Step 5

While the meat is marinating, prepare the coals. Briquettes keep the heat for an hour, while ordinary charcoals keep the required temperature for only 40 minutes. You can determine their readiness with a hand, which must be placed at a distance of 10-12 cm from the coals. If you hold your hand for no more than 3 seconds, then you can fry the meat - the temperature is approximately 320 ° C.

Skewer the meat along the grain. Smaller pieces should be at the edges and larger pieces in the middle. There should not be too large gaps between the pieces on one skewer, this will allow the juice to remain in the meat and at the same time cook well on all sides. If desired, you can alternate meat with onions or bacon on a skewer.

Step 7

Place the skewers on the grill so that it is convenient to turn them over. Make sure that the charcoal does not catch fire during cooking.

Step 8

Check the meat for doneness by making a cut with a sharp knife. If white juice comes out of the piece, then the dish is ready. With well heated coals, it will be ready in about 15 minutes.

Serve kebabs with lemon, fresh onions and herbs.
