Step 1
Fry the duck over high heat until golden brown, transfer to a saucepan. Add a little salt, pepper, a good portion of thyme, wine, soy sauce, a little hot water and simmer for 2 hours. Cook potatoes, cut into cubes, until half cooked. Put the potatoes in a frying pan, pour with a mixture of butter and soy sauce. We bake in the oven until tender.
Step 2
At this time, we cook the pears (they must first be peeled, cut into halves and the core removed with a spoon) and we make the sauce: put sugar in the pan, melt it a little, add cherries, brandy and set on fire.
