Chilindron is a very spicy sauce made from peppers, tomatoes, garlic, and onions. Poultry or lamb is cooked in this sauce with the addition of raw smoked ham. In Spain, this dish is called Pollo al Chilindron.

It is necessary

  • - 2 small chickens, 600 g each;
  • - 4 tomatoes;
  • - 4 small green peppers;
  • - 200 ml of olive oil;
  • - 1 onion;
  • - 150 g of raw smoked ham;
  • - a glass of light red wine;
  • - garlic, chili, salt.

Instructions

Step 1

Rinse the chickens, cut into portions. Fry in olive oil until tender. The chicken pieces should be golden brown.

Step 2

Peel and chop the onion, pepper and garlic. Cut the tomatoes into cubes. It is better to take more garlic to make the sauce spicier. Fry these ingredients separately in a saucepan.

Step 3

Transfer the fried chicken pieces to a saucepan and simmer together for 5 minutes.

Step 4

Thinly cut the raw smoked ham, send to a saucepan, pour in red wine (preferably a dessert one), cook for 15 minutes.

Step 5

After this time, the chicken pieces can be served. Top them with the sauce in which the chicken was stewed.
