It turns out that the popular GOST "potato" cake is not chocolate inside at all! And white! And they began to add cocoa to it only in order to hide some of the errors in the biscuit, for example, that it was burnt.

Step 1
First, let's make a biscuit. To do this, we divide the eggs into whites and yolks. Beat the whites with 1/2 sugar in a gentle foam, and beat the yolks with the other half of the sugar until fluffy, whitened.
Into the yolk mass, carefully, add the sifted flour and knead until smooth. Make sure there are no lumps!
After that, gradually add the whipped whites into the yolks, gently kneading after each portion of the whites.
Step 2
Put the biscuit dough in a mold. We bake in an oven preheated to 170 degrees for about 30 minutes.
Check for a dry toothpick! The baking time depends on your oven!
Let the biscuit cool, remove it from the mold, wrap it in foil and put it in the refrigerator overnight.
The next day, crumble the biscuit into small pieces. This can be done with a blender or simply crumbled by hand.
Step 3
Beat soft butter until fluffy white cream together with powdered sugar. When the desired consistency of oil is reached, then add condensed milk (not boiled) to the mixture and beat well again. Add cognac last and beat well again.
The cream is ready.
According to GOST, cognac is used in cakes, but if only children eat cakes, it can be completely excluded.
If the room where you are cooking is very hot, then it is better to put the cream in the refrigerator for a while.
Step 4
Combine the prepared cream and biscuit crumbs and knead until a homogeneous sticky mass. It is not necessary to make the mass very homogeneous. Somewhere there may be inclusions with a piece of biscuit.
We sculpt the required number of potatoes (their size depends only on your preferences) and roll them in cocoa.
Chill them in the refrigerator for about one hour before serving.
Sometimes, before serving, "commas" from the remains of white cream are applied to the cakes, imitating the sprouts on the potatoes. It's an optional element, but very cute.
