Carrot cake with poppy seeds is a simple and delicious pastry that can be served with tea any day. You will need a little time to prepare it. It turns out such a cake is soft, tasty. And it looks delicious and "sunny" - due to the addition of carrots.

- - 3 carrots
- - 300 g flour
- - 4 eggs
- - a glass of vegetable oil
- - 400 g + 125 g sugar
- - a tablespoon of baking powder
- - 50 g cocoa
- - 100 ml cream
- - 120 ml of water
- - 9 g gelatin
- - three tablespoons of poppy seeds

Step 1
Grate the carrots. Bring to a puree with an immersion blender. Add vegetable oil to the carrots chopped in this way, mix everything well.
Step 2
Beat eggs with sugar in the amount of 400 g. Mix chopped carrots with eggs. Add the poppy. If you are not very fond of poppy seeds, you can bake without it.

Add flour and baking powder. Mix everything thoroughly. Line a baking dish with parchment paper, pour the dough into it.
Step 4
Put the future pie in the oven, preheating it to 180 degrees. Bake for 40 minutes. Check readiness with a toothpick.
Step 5
Remove the carrot cake from the mold and cool. Make the cocoa frosting. To do this, soak the gelatin in water so that it swells.
Step 6
In a saucepan, combine cream, sugar - 125 g, cocoa. Stir gently and heat over low heat. Then add the swollen gelatin. Do not bring to a boil, wait until all ingredients dissolve.
Step 7
Pour the icing over the cake. It needs to be poured into the center so that it flows down the edges. You can move the cake itself, do not touch the icing, then it will turn out to be "mirror-like". Decorate the cake as you like, chill, cut into portions.
