- - 1-1.5 cups tomato juice

- - salt, pepper, bay leaf, paprika

Step 1
First, take the eggplant, wash it well and peel it in strips. When cooking, this will help them keep their shape and the eggplants will be tender and tasty.
Step 2
Fry the eggplants in large amounts of vegetable oil in portions. When frying, eggplants do not absorb oil, this is a big plus.
Step 3
Fry until golden brown, but not overly. Place the fried eggplants on parchment paper, which will collect the excess oil.
Step 4
Fry the minced meat in a skillet, then add chopped bell peppers and onions. Simmer until cooked, season with salt to taste, add bay leaf, paprika, ground pepper.
Step 5
In the eggplant, make a cut on the side and use your thumbs to crush the flesh inside, forming cups, put the minced meat. Salt the eggplants inside before stuffing.
Step 6
Squeeze the garlic into the tomato juice, add chopped parsley and mix everything well and pour the stuffed eggplants. Put the tomato mugs on top and place in a preheated oven to 180 degrees for about 20-25 minutes. Garnish with parsley and serve.
