Broccoli and potato curries are both delicious and healthy. It can decorate not only an ordinary family dinner, but also a festive meal.
It is necessary
- - 2 tbsp. l. sunflower oil
- - 1 tsp cumin
- - 1 onion, cut into thin half rings
- - 2 tbsp. l. curry powder
- - 200 g chopped canned tomatoes
- - 1 stick of cinnamon
- - 350 ml vegetable broth
- - 450 g small young potatoes (cut the tubers in half and boil)
- - 300 g broccoli
- - salt
- - 100 ml low fat yoghurt
- - cakes for serving
Instructions
Step 1
Heat oil in a wok or large skillet. Fry cumin and onions over high heat for 3-4 minutes. Add curry. Cook for another 1-2 minutes, then add the tomatoes, cinnamon and broth.
Step 2
Bring to a boil, add potatoes and broccoli. Cover, reduce heat, and cook, stirring regularly, for 8-10 minutes, until broccoli begins to soften.
Step 3
Season with salt to taste and pour over with yogurt.
Serve with tortillas.
