It is necessary

  • - 900 grams of pork neck,
  • - 4 apples (preferably sweet and sour),
  • - 300 ml of apple juice,
  • - half a lemon,
  • - 4 tablespoons of Dijon mustard,
  • - 4 bay leaves,
  • - 1 tablespoon of a mixture of allspice and black peppercorns,
  • - salt to taste.

Instructions

Step 1

Wash the lemon, pat dry with a paper towel, and grate the zest. Squeeze juice from the pulp. Pour 150 ml of apple juice into a convenient bowl, add freshly squeezed lemon juice, grated zest and 4 tablespoons of Dijon mustard, stir well.

Step 2

4 bay leaves and peppercorns, crush a little with a crush, mix with the marinade.

Step 3

Rinse the pork, dry and cut into pieces convenient for you. Note that larger pieces take longer to cook. Place the pieces of meat in the marinade, stir well, wrap in plastic wrap or cover. Leave in the refrigerator for 3-4 hours, you can overnight, as it is more convenient.

Step 4

Light the coals in the charcoal grill. Rinse 3-4 apples, dry, cut into quarters, remove seeds.

Step 5

Take out the kebab and shake each piece of meat from the spices. If you do not shake it off, the spices will burn, and the kebab will not be so tasty. Skewer the meat. Alternate between meat and apples.

Step 6

Grill the kebab over charcoal until tender, periodically grease with marinade.

Step 7

Pour 150 ml of apple juice into the remaining marinade, season with salt and ground pepper, put on fire and boil for three minutes. Strain, cool and serve as a sauce.
