A colorful salad will decorate a festive table and a country picnic.
Tortellini are small Italian dumplings made from unleavened dough. Minced meat, cheese or vegetables are used as a filling. Bolognese are proud of this dish and say that tortellini are shaped like rosebuds. They are simple to cook and can serve as an independent dish. And you can also make a delicious salad with them.
For four servings of salad you will need:
- 250 g dry tortellini stuffed with cheese.
- 2 tablespoons lemon juice.
- 1/4 cup olive oil
- 1 tablespoon mustard
- 1/2 spoonful of dill.
- 5 tomato.
- 1 zucchini.
- Red and green bell peppers.
- Salt, pepper, sugar.
To prepare this salad, you need to boil the purchased tortellini in water. They are cooked like ordinary dumplings. Put tortellini in boiling, salted water. The cooking time is approximately 10 minutes. It is more precisely written on the package, or you can take a sample. It should be cooked occasionally, stirring occasionally.
While the water is boiling, you can make the sauce. It will be based on lemon juice. Pour two tablespoons of lemon juice into a deep bowl and add a teaspoon of lemon zest to it. Beat salt, pepper, mustard and vegetable oil together with lemon juice. The sauce should be smooth. Finely chopped dill can be tossed in the sauce.
While the tortellini is cooking, you can cook the vegetables. It is better to take small tomatoes, then they can be cut in half or into quarters. Sweet peppers are cut into cubes. If you take peppers of different colors, then the salad will look very festive. It is not necessary to be small. Every vegetable in the salad should be recognizable. The zucchini is cut into slices. Onions are cut into thin half rings. Green onions are crumbled into small rings. After cutting, stirring vegetables is optional.
When the tortellini is cooked, drain the water and put it in a colander. When the water has drained, the tortellini are transferred to a bowl and poured over with the prepared sauce. To soak each dumpling with the sauce, mix everything well. Now you can add vegetables and mix again. The salad is almost ready to serve.
This dish can be served hot or chilled. This is not for everybody. If you prepare a salad in advance, then you should not mix all the ingredients in advance. Cooked tortellini, you can pour half of the prepared sauce. The second half of the sauce and vegetables should be added before serving. Greens can be sprinkled over the top of the salad for a beautiful look.
