It is no coincidence that these muffins got their funny name: you had to have a rich imagination to come up with such a rich and tasty filling for muffins!
It is necessary
- For 6 cupcakes:
- - 125 g premium flour;
- - 100 g brown sugar;
- - 1 tsp baking powder;
- - 1 tsp cinnamon;
- - a pinch of salt;
- - 1 large egg;
- - 100 ml of vegetable oil;
- - 0.5 large apple;
- - 1 carrot;
- - 0, 25 st. dried cranberries;
- - 100 g toasted nuts.
Instructions
Step 1
Peel the carrots and apple, remove the core from the apple. Grind them: grate on a fine grater or in a chopper with the addition of toasted nuts. Add dried cranberries to nuts, vegetables and fruits, mix.
Step 2
Preheat the oven to 200 degrees, line muffin tins with special baking cuffs or grease them with oil.
Step 3
Sift flour with baking powder, salt and cinnamon into a large bowl. Add brown sugar to flour, mix. Separately mix all liquid ingredients - egg and butter - until smooth. Combine dry and liquid mixtures, stir quickly and carefully until the dough sets just a little and add the filler mixture. Stir for a few seconds and place in molds.
Step 4
Bake for 20-25 minutes in a preheated oven. After baking, let stand in the tins for 10 minutes, and then transfer the muffins to the wire rack until they cool completely.
