You don't need dairy or eggs to make these wonderful muffins. The ingredients are very simple and the taste is striking in its richness. Try it! Perhaps this recipe will become one of your favorites.

- - sugar - 1 tbsp.
- - vegetable oil - 100 ml
- - flour - 2 tbsp.
- - soda - 1 tsp.

- - peeled seeds or walnuts - 50 g

Step 1
First of all, wash the carrots, peel them and grate them on a fine grater. Place one glass of grated carrots in a deep bowl. Add a glass of sugar. Pour in 100 ml of vegetable oil. Stir the resulting mixture thoroughly and set aside for 15 minutes.
Step 2
Meanwhile, fry the seeds or walnuts in a dry skillet. If you like raisins, you can add them to muffins instead of seeds and nuts.
Step 3
After 15 minutes, sift two cups of flour into the bowl of carrot mixture. Add a pinch of salt and spices: cinnamon, vanillin. If desired, you can add any spices suitable for sweet pastries: cardamom, ground ginger.
Step 4
Add one teaspoon of baking soda to the muffin batter. Add 1/2 part of the fried sunflower seeds or nuts. Stir the muffin mixture.
Step 5
Preheat oven to 180 C. Place the muffin mass in muffin tins. You can also make one large cake in a baking dish or cast iron skillet. Sprinkle the remaining seeds or nuts on the muffins. Bake the muffins until tender, about 25 to 30 minutes. Enjoy your tea.
