Georgian tomatoes are an excellent appetizer, as green tomatoes in combination with pepper and garlic have a spicy and piquant taste. The dish cooks quickly and is ready in ten days.

- –Green tomatoes of medium size (2-3 kg);

Instructions
Step 1
Tomatoes should be firm with a firm skin. Pre-wash the tomatoes, dry with a towel. Next, take a sharp knife and use the blade to make a deep longitudinal cut across each tomato. You should have a kind of pocket.
Step 2
Rub the salt over the inside of the cut and on top on all sides. Transfer the tomatoes to a separate container and let sit for a while to let the juice stand out.
Step 3
While the tomatoes are infusing, start slicing all the greens. Wash cilantro, parsley, dill and green pepper thoroughly, dry and chop. It is better to use a knife for this. However, you can also use a blender. Chopped greens should give juice. Also add the garlic to the greens and stir.
Step 4
Next, take each tomato and, with clean hands, fill the cut with herbs combined with garlic. Place the maximum amount of filling in each tomato. This will make the tomatoes very fragrant.
Step 5
Transfer the tomatoes with herbs to a glass jar or wooden tub. Cover the top with a weight or a can of water. Leave the tomatoes in a cool place for 5-10 days. The advantage of this recipe is that the tomatoes are salted from their own juice.
