The aromatic and golden chicken broth not only tastes great, it is also very healthy. Chicken broth is highly digestible, low in calories, and also contains the amino acid cysteine, minerals and vitamins.
Ingredients for making chicken stock:
- 1/2 chilled medium-sized chicken;
- 1 head of white onion;
- 1 fresh carrot;
- 1-2 bay leaves;
- about 3 liters of water;
- salt.
Cooking a fragrant chicken broth:
1. Half of the chicken carcass must be washed and, if desired, divided into several pieces.
2. Put the washed chicken in a saucepan and cover with cold water. Do not cover with a lid.
3. Before boiling, the meat should be cooked over high heat, and then reduced by about half.
It is necessary to remove the foam from the broth so that it is beautiful and transparent.
4. After boiling, add salt and stir.
5. Wash, peel and chop onions and carrots arbitrarily, but not too coarsely.
6. Add bay leaves, onions and carrots to the broth about 20-25 minutes after adding salt.
7. After that, you need to cook the broth for about an hour, depending on the age of the chicken.
8. It is not difficult to check the readiness - you need to make sure that the meat separates well from the bones.
9. The finished meat from the broth can be separated from the bones, cut and again dipped into the broth.
10. Ready stock can be used as a base for many soups. You can also serve it with herbs, croutons, or boiled eggs.
