Meat rolls are prepared from any meat - pork, veal, turkey, beef, chicken, rabbit. Different ingredients are also used for the filling: fruits, vegetables, mushrooms, cheeses, eggs and much more. An original dish made from pork belly, cranberries and brandy will become a table decoration - the pinnacle of culinary art. Of course, the process of making such a roll is laborious, but the juicy, appetizing-looking, tender roll is worth it.
It is necessary
- - 1.5 kg of pork brisket;
- - 130 g of dried cranberries;
- - 50 ml brandy;
- - 6 sprigs of thyme;
- - olive oil, salt, black pepper.
Instructions
Step 1
Rinse the cranberries in warm water, pour in the brandy, set aside for 30 minutes.
Step 2
Spread the meat on the board, make an incision in the middle along the grain, not reaching 5 mm to the bottom.
Step 3
Spread the meat with your hands, make deep cuts across the right and left inside the layer, 5 mm before each edge.
Step 4
Open the meat like a book, cover the meat with cling film, beat with a hammer - the layer thickness should be no more than 1.5 cm.
Step 5
Rub the meat with salt, pepper, sprinkle with thyme.
Step 6
Grind the soaked cranberries in a coarse puree in a blender, put on the meat in a thin layer.
Step 7
Roll up, tie with culinary thread, pepper, salt, drizzle with olive oil.
Step 8
Bake the meatloaf in the oven. 60 minutes at 180 degrees will be enough. Occasionally water the roll with juice that will come out of the meat.
