Potato tortilla is a traditional Spanish dish made with eggs, potatoes and onions. To diversify the taste of the dish, Spanish housewives often add fresh and aromatic mushrooms to it.

- - 300 g of any fresh mushrooms;
- - 4 potatoes;

Step 1
My mushrooms, peel and cut into slices. Heat some olive oil in a frying pan, fry the mushrooms over medium heat until tender, set aside.
Step 2
Peel the potatoes and cut them into slices no more than 8 mm thick, chop the onion.

Pour olive oil into a deep frying pan with a thick bottom (the recipe uses a frying pan with a diameter of 22 centimeters). Put potatoes and onions in a pan, salt, fry over medium heat for 12-15 minutes, constantly stirring the ingredients so that the potatoes and onions are fried, but do not change their color.
Step 4
Beat the eggs in a large bowl, put the mushrooms into the bowl with a slotted spoon, and then the potatoes and onions, letting the oil drain, salt and mix the ingredients.
Step 5
Drain almost all the oil from the pan, leaving literally 2-3 tablespoons. We increase the heat to the maximum, put the egg mass with vegetables in the pan and fry until golden brown. Using a plate or a flat lid, turn the potato omelet over and quickly let it slide into the pan with the side that has not yet been fried. Fry the tortilla again until golden brown. We serve the dish hot or cold. The cooled tortilla can be used as a filling for sandwiches by adding a little mayonnaise or your favorite ketchup.
