Broth with ears is the first hot dish based on beef, or lean pork. The cooking process and ingredients of the "ears" are somewhat similar to dumplings, but boiled meat is used for them, which makes the "ears" more tender and neutral.
It is necessary
- - beef or lean pork 450 g;
- - onion (large head) 1 pc;
- - butter 40 g;
- - premium wheat flour 500 g;
- - chicken egg 1 pc;
- - boiled water 200 g;
- - salt;
- - greens;
- - green onions;
- - spices.
Instructions
Step 1
Prepare broth with beef or lean pork. Strain it.
Step 2
Grind the boiled meat in a meat grinder or blender, adding onions pre-fried in refined vegetable oil. Add salt and pepper to the minced meat and mix with soft butter.
Step 3
Drive a chicken egg into the flour, add water, salt and knead into a soft dough.
Step 4
Make a thin layer of dough and, using a glass or a round shape, cut out circles from it, in the middle of which put a small ball of minced meat. Roll the dough mugs and pinch the edges. You should get small crescents.
Step 5
Boil salted water in a wide bowl. Place the cobbled ears in it and cook, stirring occasionally, until tender.
Step 6
Put 6-7 cooked "ears" in a plate for the first courses and pour the meat broth, preheating it. You can also add chopped green onions and herbs to the plate.
