Blue whiting under a vegetable "fur coat"
Ingredients:
- 1 kg of headless blue whiting fish;
- 2 onions;
- 2 carrots;
- 100 g flour;
- 100 g sour cream;
- 2 pinches of ground black pepper;
- salt;
- vegetable oil;
- 30 g of dill.
Peel the carcasses and cut off the tails. Rub the fish with pepper and salt to taste, roll generously in flour and fry in hot vegetable oil. Place the contents of the skillet in a plate, return the crockery to the stove and add the oil. Thinly chop the carrots and peeled onion and sauté them until soft, then stir in the sour cream, salt everything, simmer for a couple of minutes and remove from heat.
Place the fish in an ovenproof dish or on a baking sheet, spread the vegetable fry evenly on top. Roast blue whiting for 10 minutes at 200oC for 10 minutes. Arrange it on plates, sprinkle with chopped dill and garnish with rice or potatoes.
Whole baked blue whiting
Ingredients:
- 1 kg gutted blue whiting with head;
- 2 lemons + a quarter;
- 2 tomatoes;
- 4 cloves of garlic;
- 30 g of parsley;
- 100 ml of vegetable oil;
- 1 tbsp. oregano;
- 3/4 tsp salt.
Lubricate a beautiful baking dish with some vegetable oil and place the blue whiting into it, bellies down, close to each other.
Slice whole lemons and tomatoes into thick, crosswise circles and insert between fish. Chop the garlic and parsley, mix with oregano and salt and apply to the carcasses. Drizzle over them with the mixture of the remaining vegetable oil, drizzle with lemon juice from a quarter and place in the preheated 200oC oven for 20 minutes. Serve in the same container to keep it presentable.
Blue whiting fish cakes
Ingredients:
- 1 kg fillet of blue whiting;
- 1 carrot;
- 1 onion;
- 1 chicken egg;
- 2 slices of white loaf;
- 40 g sour cream;
- 1/2 tsp paprika;
- 1/3 tsp ground black pepper;
- salt;
- vegetable oil.
Soak the loaf slices in water and squeeze lightly. Grate the carrots on a coarse grater. Grind whiting fillets or grind in a blender along with onion quarters, bread and orange straws. Stir the minced meat well with egg, pepper and salt and refrigerate for 20 minutes.
Form large meatballs from the fish mass and place them on a greased baking sheet. Spread generously the top of the cutlets with sour cream and paprika (for a nice crust) using a cooking brush. Cook the blue whiting platter at 200oC for 20 minutes.
