Carrots are a storehouse of nutrients. It contains many vitamins, minerals and essential oils. Carrots are rich in carotene, which is converted to vitamin A in the human body. Since vitamin A promotes growth, carrots are especially beneficial for children. But you can't eat much of it raw. The recipe for carrot cutlets will come to the rescue, which is indispensable for the children's table and pleasantly diversifies your daily diet.

- 3-4 carrots;
- 3 eggs;
- 125 g semolina;
- 250 ml of milk;
- 100 g bread crumbs;
- 25 g butter;
- a pinch of salt;
- vegetable oil for frying.
Instructions
Step 1
Wash the carrots, peel and grate on a coarse grater. Put the grated carrots in a saucepan, add milk, butter and salt there. Simmer the mixture over low heat until softened, stirring occasionally.
Step 2
Pour semolina into the resulting mixture. Stir until smooth and cook over low heat for 5 minutes. Then cool the mixture. Separate the egg yolks from the whites. Add 3 yolks to the cooled carrot mass and mix thoroughly.
Step 3
Whisk in the egg whites. Heat a skillet over medium heat and brush with vegetable oil. Form cutlets from the carrot mixture, dip them in beaten egg whites, roll in breadcrumbs and put in a pan. Fry the patties on both sides until golden brown. You can bake cutlets in the oven for 5-10 minutes.
Serve ready cutlets on the table, anoint with sour cream or jam, or add a vegetable side dish.
Step 4
If you want to make sweet carrot burgers, you can make them with apple and raisins. To do this, take 2-3 apples and a handful of raisins. Wash the apples, peel and grate on a coarse grater. Then add the apples to the pot at the beginning of the cutlets and simmer them along with the carrots in the milk.
Rinse the raisins, scald with boiling water and soak in hot water for 5-10 minutes. Add the raisins to the carrot-apple mixture a few minutes before stewing is finished. In this case, add 3 teaspoons of sugar to the mixture. You can also add vanillin to add flavor.
Step 5
You can also make carrot cutlets with cottage cheese. To do this, add 80-100 g of cottage cheese to the stewed carrot mixture after it has cooled. In this case, it will be enough to put 1 egg in the cutlets. Next, cook the patties according to the original recipe.
