Sturgeon (black) caviar has enjoyed well-deserved admiration and respect for a long time. True, not everyone can afford it, because sturgeon caviar is rightfully considered a rare and valuable delicacy. Black caviar is not just a food product, its presence on the table testifies to the good taste and wealth of the owner.
Black caviar is obtained from three types of sturgeon fish: sturgeon, stellate sturgeon and beluga. An interesting fact is that black caviar, upon close examination, is not so black. And even more, the lighter the color of the caviar, the more it is appreciated by gourmets.
Also, do not assume that all black caviar is the same. The grains differ in size, color, the caviar itself differs in chemical composition, density, and other properties. Of great importance for connoisseurs is the density and elasticity of the grains, and, of course, the taste.
The first and leading place in the hierarchy is occupied by beluga caviar. This fish is the largest of all known sturgeon species and can reach a length of six meters. In our time, beluga of this size is practically not found. Despite the fact that the life expectancy of this species of fish is about 100 years, females are able to spawn only from the age of twenty, and even then not every year.
Caviar color ranges from light gray to almost black. In addition, caviar is distinguished by its impressive size, which is more reminiscent of red coarse-grained caviar. The shell of the grains is very thin, which gives the caviar the effect of “melting in the mouth” and is fanatically appreciated by gourmets all over the world.
The second place is rightfully taken by sturgeon caviar. It is smaller in size, since the largest representatives of the sturgeon reach only two and a half meters. It is noteworthy that the sturgeon is capable of spawning at the age of eight. Sturgeon caviar can be of various colors, from golden to dark brown.
The third place belongs to stellate sturgeon. She rarely reaches one and a half meters in length, but she begins to spawn from the age of seven. The grains of her caviar are small in size, however, connoisseurs attribute a special, incomparable taste to her neat eggs.
Black sturgeon caviar has a number of differences from red, obvious and not so much.
First of all, the color and size of the caviar are striking. If sturgeon caviar is darker in color, then red caviar varies in color from dark yellow to bright scarlet. Black caviar is obtained from sturgeon fish species, red caviar from the salmon family. Both types of caviar are simply priceless in terms of nutrition.
The caviar contains a sufficient amount of amino acids, sodium, phosphorus, iron, potassium and magnesium. Also, caviar contains a lot of easily digestible protein, as well as a lot of vitamins. One hundred grams of red caviar contains 270 kcal, the same volume of sturgeon - 280 kcal.
