If you like poultry along with unusual sauces, then try making chicken pesto. Treat yourself and your family to an unusual traditional Mexican dish.
It is necessary
- -2 cups wrapped spinach leaves, stems removed
- -1/3 cup pistachios
- -1/3 cup olive oil
- -1 medium garlic clove, coarsely chopped
- -1 teaspoon juice from 1 lemon
- -1/3 cup grated Parmesan cheese
- -Salt and freshly ground black pepper
- chicken fillets, cut into 1-inch cubes
- -1 tablespoon butter
- -2 cups cooked pasta (sour cream)
Instructions
Step 1
Thoroughly chop spinach, pistachios, olive oil, garlic, lemon juice and 1/2 teaspoon salt in a food processor. Add cheese, spinach and pour over the whole mixture with olive oil, then chop again in the food processor. Season to taste with salt and pepper and set aside.
Step 2
Stir the chicken cubes with salt and pepper. Melt the butter in a skillet. Place the chicken in the butter and fry, turning occasionally, for about 8 minutes over high heat.
Step 3
Place the sauce in the serving bowls, then divide the chicken evenly. Place a large amount of pesto in each bowl and serve immediately. Bon Appetit!
