Cabbage leaves contain many useful substances that are so necessary for the normal functioning of our body: vitamins, proteins, carbohydrates, fiber, minerals. They are used in folk medicine to absorb bruises and relieve inflammation, as well as to prepare some dishes.

Step 1
First, you need to choose the right white cabbage. Decent specimens can be found in stores and on the market. The main guideline when choosing is appearance: it should be with fresh green leaves, without defects and brown spots. It is better to take the head of cabbage, the outer leaves of which have not been removed, it is they who protect the core of the cabbage. The denser the head of cabbage and the greater its weight with the same size, the better.
Step 2
If you need cabbage leaves for further culinary processing, then carefully cut off the top ones that are damaged or too rough. Then use a deep saucepan that can hold the entire head of cabbage. Put it in it and pour water so that it covers the cabbage by a centimeter. Then remove the head of cabbage, add a quarter teaspoon of citric acid or a spoonful of vinegar to the water, cover the pan with a lid and place on the stove to boil the water.
Step 3
As soon as the water boils, dip the head of cabbage into the saucepan. For convenience, if the weight of the head of cabbage allows it, you can stick a fork into the stump so that the cabbage can be easily removed from the pan. As soon as the water boils again, wait half a minute and remove the head of cabbage from the boiling water. The fire under the pan can be reduced.
Step 4
Carefully peel off the top, lightly welded leaves, usually two or three layers can be removed. Then immerse the cabbage in boiling water again and wait a minute. Remove the head and remove the leaves again. Repeat the process until the cabbage leaves are too small or you are satisfied with the number.
Step 5
If the cabbage is winter, then in order to make the leaves easier to separate, before releasing the head of cabbage into boiling water, cut the stump out of it with a sharp long knife, trying to remove it completely. After that, put the cabbage in boiling water and boil a little. Remove the cabbage from the pot and carefully separate the cooked leaves.
Step 6
If you need fresh cabbage leaves, then after removing the stalk, wrap the cabbage in plastic wrap or put it in a plastic bag, wrapping it tightly so that there is no air. Place the cabbage in the freezer for 1 day, then remove and defrost without unwrapping at room temperature. After that, take it apart, the leaves will become soft and peel off easily.
