Early varieties of pears in central Russia usually bear fruit abundantly, while the fruits ripen at the same time, quickly become soft and can rot. So that the crop does not disappear, it must be processed as soon as possible. For example, make pear liqueur wine at home. It is a sweet alcoholic drink with a beautiful golden color and delicate aroma, which is good in itself and as an ingredient in original desserts.
A simple pear liqueur wine recipe
Collect ripe pears and sort them carefully to completely eliminate rotten raw materials. Remove seeds and cuttings. Cut the fruit into small slices and add them to a regular 3 liter jar. For liqueur wine, add one part granulated sugar to four parts of pears.
Close the container with a simple plastic lid and let the pear liqueur wine ferment at room temperature. The place where the glass jar will stand must be reliably protected from direct sunlight. In 2-2.5 months the product will be ready for use.
How to filter pear wine at home
The settled young liqueur wine from pears, which has become transparent, carefully drain with a rubber hose into empty clean bottles. At the same time, insert a funnel made of dense white matter into the neck, for example, a flap of coarse calico or flannel. When pouring liquid, try not to lift the dregs from the bottom!
Strain the rest of the drink from the glass jar through a couple of layers of clean gauze and leave to infuse for a week until transparent. Store homemade pear wine in a tightly sealed glass container in a cool, dark place at a constant temperature.

Like any other dessert alcoholic drinks, homemade pear wine can be served with sweets, such as fruits and pastries. In addition, you have at your fingertips an original basis for making unique cocktails, desserts, baking fillings, which you can pamper yourself with and surprise your loved ones. Here are just some of the pear wine recipes.
Pear liqueur wine cocktail with cloves
Pour ground cloves (40 g) with hot water and boil, then close the pan and let stand under the lid for 20 minutes. Strain the clove infusion. Prepare a syrup for a homemade cocktail: take granulated sugar and water in a 1: 1 ratio, bring the liquid to a boil, gradually adding sugar. Add the clove infusion and simmer for 10 minutes.
For one cocktail, in a cone-shaped glass, mix homemade pear wine and sweet champagne (30 ml each), mint or apricot liqueur (20 ml), 2 teaspoons of freshly squeezed lemon juice and the same amount of clove syrup. Drink an iced drink.
Apricot filling with pear wine for pie
Rinse ripe apricots (800 g) thoroughly, divide them into halves and remove the pits. Place the fruit on top of the open pie dough with the semicircular side up, then top with apricot jam or jam (100-150 g).
Sprinkle the filling with pear liqueur wine (50 ml). Spread pieces of butter on top (3 tablespoons in total), sprinkle with five tablespoons of granulated sugar.
Banana ice cream with pear liqueur wine
Arrange a water bath using a saucepan and bowl of a suitable diameter. In it, beat a mixture of granulated sugar (0.5 cups) and egg yolks (6 pcs.) For 10 minutes. When the sweet mass has doubled in volume, cool it down.
Whip 300 ml of chilled (but not frozen!) Cream, the fat content of which should be at least 30%. Pre-keep a broom and a container for beating in the cold. When you have a stable white substance, combine it with the cooled egg yolks and sugar.
Peel 3 bananas, chop into a blender bowl, add the juice of one lemon and chop everything until smooth. Stir all the ingredients of the banana ice cream thoroughly and chill in the freezer until it solidifies. Sprinkle a tablespoon of wine over each 120g serving of dessert when serving.
