To make the dough fluffy and airy, add baking soda to it. It is not required to extinguish it - sour kefir neutralizes the characteristic taste.

Fluffy pancakes

Try one of the simplest recipes - kefir pancakes. They turn out to be very lush and tasty. Vary the degree of sweetness to your liking, but remember that too sweet dough will burn.

You will need:

- 1 glass of kefir;

- 1 teaspoon of baking soda;

- 1 tablespoon of sugar;

- 0.25 teaspoon of salt;

- 1 glass of wheat flour;

- vegetable little for frying.

To make the dough airy, sift the flour before kneading.

Pour kefir into a deep bowl, add sugar, salt and soda, stir the mixture. Pour flour in portions, rubbing the dough well so that no lumps form. The consistency of the mass should resemble thick sour cream.

Heat unscented vegetable oil in a skillet. Do not add too much fat, or the pancakes will turn out flat and tasteless. Spoon the dough into round or oblong cakes with a spoon. When the underside of the pancakes is browned and the top is bubbling, turn the pan over and continue frying. Check the readiness by piercing the pancake with a fork - no traces of dough should remain on the prongs.

Put the finished pancakes in a deep dish and keep warm. Serve hot, along with sour cream, honey, jam, and other delicious toppings.

Pies with different fillings

When planning to bake pies, it is not necessary to start a yeast dough. Make a quick dough with kefir. Pies made from it with different fillings can be baked in the oven, but it is much tastier to fry them in vegetable oil. Kefir dough turns out to be very soft and, when fried, quickly acquires a crispy brown crust. According to this recipe, you can also make a large pie - it is baked in the oven or slow cooker.

You will need:

- 350 ml of kefir;

- 450 g of wheat flour;

- 1 teaspoon of baking soda;

- 1 tablespoon of sugar;

- 0.5 teaspoon of salt;

- 3 tablespoons of refined vegetable oil.

For filling:

- 300 g of ready-made minced meat;

- 1 onion;

- salt;

- vegetable oil for frying.

Pies can be stuffed not only with meat. Try mixing canned fish with boiled rice or chopped green onions with a boiled egg. Pies with apples, berries or jam will also turn out very tasty.

Combine the sifted flour with sugar, salt and baking soda. Pour everything into a bowl, make a depression in the flour and pour in the vegetable oil and some of the kefir. Stir the mixture and then pour in the remaining kefir. Knead the dough with your hands until smooth. Collect it in a lump, cover with a towel and let stand for about a quarter of an hour.

Prepare the minced meat. Chop the onion finely and place in a skillet with a little vegetable oil. Fry the onion until transparent and add the meat to it. Breaking the lumps with a wooden spatula, fry the minced meat until tender, then salt to taste.

Divide the dough into small lumps, roll them in flour and roll them into flat cakes. Place a tablespoon of minced meat in the middle of each flatbread, and then firmly fasten the edges, giving the patties the look of boats. Heat vegetable oil in a deep frying pan and place the patties in it, seam side down. After frying the products on one side, turn them over. Serve the finished baked goods with fresh sour cream.
