Banush (or banosh) is a delicious Transcarpathian dish made from corn grits or flour. It is traditionally served with fried mushrooms, cracklings, sour cream, etc. Modern chefs have turned this folk dish into a true culinary masterpiece. We also offer you to cook a wonderful banush yourself.
It is necessary
- Sour cream - 500 g (15% fat);
- Corn flour - 1 tbsp.;
- Cheese or feta - 100 g;
- Onion - 1 pc.;
- Smoked lard (or brisket) - 200 g;
- Salt, ground pepper - taste.
Instructions
Step 1
Pour sour cream into a saucepan and let it boil. If the sour cream is too thick, you can dilute it a little with water. Salt and pepper.
Step 2
Pour corn flour into the boiling mass in a thin stream. Cook the banosh over low heat for 5-7 minutes, stirring constantly with a wooden spatula so that the porridge does not burn.
Step 3
Cut the bacon into cubes. Peel and chop the onion.
Step 4
In a well-heated frying pan, fry the bacon until golden brown and add the onion. Fry everything together until tender.
Step 5
Rub the cheese or feta on a grater.
Step 6
Banosh can be served separately: porridge, cracklings, grated cheese. Or you can do it differently: lay out everything in layers.
Step 7
Put a layer of porridge on the bottom of the refractory form, on top of cracklings, feta cheese and repeat again. We send the banush to the preheated oven for a few minutes.
