For this dish you will need the following ingredients: 450-500 grams of horse meat pulp, 1 large onion (or 2 small ones), 1 pickled cucumber, 2 ripe tomatoes, 3-4 medium potatoes, 1 full (top) spoon of butter or ghee, 1 glass of broth or hot boiled water, 1-2 cloves of garlic, salt, black pepper and herbs to taste.

Rinse the horse meat in cold water and pat dry with a paper towel. Cut into small oblong wedges. Cut the onion into small pieces, remove the skin from the tomatoes and also cut into pieces. If the tomatoes are dipped in boiling water for a few seconds, it will be very easy to peel them.

Heat the oil in a frying pan, lightly fry the horse meat cubes on all sides, then transfer them to a saucepan or stewpan, salt and pepper. In the same pan, fry finely chopped onions, add tomato slices, stir, fry the mixture for another 2-3 minutes, then transfer to a bowl with fried horse meat. Pour in broth or hot water, place the dishes with meat on moderate heat and simmer for about 25 minutes. Peel the potatoes, cut into medium cubes, lightly fry in a skillet and transfer to a bowl of meat. Peel the pickled cucumber, chop finely, add to a saucepan or stewpan and simmer until tender. When serving, sprinkle the prepared azu with a mixture of finely chopped herbs and chunks of garlic.

Cut the washed and dried meat into small pieces, salt each piece, pepper and rub with mustard. Place the meat in the refrigerator for at least half an hour to marinate. If possible, leave the meat in the refrigerator for a few hours, then the dish will be tastier.

Heat the oil in a frying pan, fry the horse meat on all sides. Transfer the fried meat to a saucepan or stewpan, pour boiling water over so that the horse meat is almost completely covered and simmer over low heat until tender. Boiled potatoes or vegetable stews are a good side dish for this very simple yet tasty and hearty dish. Also horse meat can be smoked, dried. This meat can be used to make noodle soup.
