Horse sausage is a rare delicacy that you cannot find in any market. Before trying this unusual dish, you should understand the benefits and specifics of horse meat.
Horse meat is a common dish for nomads. This meat is not only always “at hand”, but it is very convenient to store it in a dry-cured form. According to the tradition of nomadic peoples, horse sausage (jamon or kazy) is a frequent guest at national celebrations. And the daily diet is not complete without it - unusual-tasting horse meat is added to every second dish during cooking.
Horse sausage: types and dishes from it
On Russian counters, horse sausage can be presented in several versions.
Mahan is a "dry" dry-cured sausage made from horse meat and fat with the addition of salt, sugar and spices. Mahan is dense, therefore, when serving it, it is cut into very thin slices.
Kazy is a sausage, which contains fatty horse meat from the ribs of the carcass as the main ingredient. It is not crushed, and the shape of the final product is very diverse, sometimes pretentious. After cooking, kazy is not only dried, but also smoked, boiled and fried.
Shuzhuk is a cross between mahan and kazy. This sausage is prepared from minced meat and thermally processed in the same way as kazy. In addition, shuzhuk, in addition to salt, is seasoned with aromatic herbs.
All horse sausages look very unusual and attractive in appearance, they are served as an appetizer, and boiled and fried pieces are added to main dishes. Soup with boiled horse sausage slices will play with an unusual taste, and pilaf or goulash with kazy or shuzhuk can surprise and please a gourmet spoiled with delicacies.
Horse sausage shashlik will add spice to outdoor recreation, but it is not recommended to overdo it with its use - too fatty and exotic horse meat.
The most dangerous type of horse sausage dish, but that is why it is no less loved by connoisseurs of raw meat, is tartare. Minced horse meat is seasoned with sauce and spices and served with a raw egg.
The benefits of horse sausage
First of all, horse sausage is classified as a product that is perfectly suitable for allergy sufferers - it contains negligible amounts of allergenic amino acids.
The second positive property of horse meat sausage is its low fat content. This applies to those types of horse sausage that do not contain horse fat and are not made from the meat of the ribs of the animal. There is a lot of water in the composition of such meat, which in general makes the sausage easy to digest and low in calories.
Even if the sausage contains fat, then it is very different, for example, from pork. It has much less cholesterol, and its properties are more similar to vegetable oils than to animals - this is the third plus.
And the last thing - delicious horse sausage is able to raise blood pressure for hypotensive patients, and vitamins and amino acids found in horse meat normalize metabolism.
