The first vegetable garden greens are a great addition to the diet. For example, sorrel can be used to make a whole meal, from salad to dessert. Delicate young leaves are especially tasty. Hurry to use them, as the sorrel grows up, it becomes fibrous and less juicy.
Sorrel and spinach salad
You will need:
- 200 g of young sorrel;
- 100 g of spinach;
- 0.5 cups of shelled walnuts;
- 3 cloves of garlic;
- 2 tbsp. tablespoons of vegetable oil;
- 1 tbsp. a spoonful of chopped green onions;
- 1 st. a spoonful of chopped dill and parsley;
- vinegar and salt to taste.
Sort the spinach and sorrel and rinse. Boil the herbs in salted water until soft, squeeze and place in a salad bowl. Prepare the sauce. Fry the walnuts in a dry frying pan and grind them in a mortar. Add parsley, dill, green onions, and minced garlic. Dilute the mixture with hot water until the consistency of thick sour cream, pour in vegetable oil and vinegar. Season the sauce with salt, season the spinach and sorrel with it and stir.
Green cabbage soup with sorrel
Green cabbage soup with sorrel can be vegetarian, but the meat version has a richer taste.
You will need:
- 1 liter of meat broth;
- a bunch of young sorrel;
- 4 potatoes;
- greens of dill and parsley;
- a bunch of green onions;
- 1 teaspoon of sugar;
- salt to taste;
- 2 hard-boiled eggs.
Sort the sorrel, rinse and dry. Salt the meat broth, bring to a boil and add the peeled and diced potatoes. Chop the sorrel and onion thinly. When the potatoes are cooked, put the herbs in a saucepan, salt, add sugar. Cook for 5-7 minutes, then add chopped parsley and dill and remove from heat. Pour the soup into bowls, each with half an egg and a spoonful of sour cream.
Sorrel patties
From the dough prepared according to this recipe, you can make not only fried pies, but also a large closed pie that is baked in the oven.
You will need:
- 2 eggs;
- 3 glasses of wheat flour;
- 1 glass of warm milk;
- 2 tbsp. tablespoons of butter;
- 20 g dry yeast;
- 3 tbsp. tablespoons of sugar;
- 0.25 teaspoons of salt;
- vegetable oil for frying.
For filling:
- 500 g of young sorrel;
- sugar to taste.
Heat the milk and transfer to a large bowl. Add eggs, dry yeast, sugar, salt and melted butter. Whisk the mixture and gradually add the pre-sifted flour. Knead the dough, let it rise warm. After the dough has risen twice, place it on a floured board and separate into small lumps.
Rinse sorrel, dry, chop thinly and mix with sugar. Roll out the dough pieces, place the sorrel filling on each tortilla. Pinch the pies thoroughly. Heat vegetable oil in a skillet and place the patties in it, seam side down. When they are browned on one side, turn over. Fry the products until tender, serve warm.
