Step 1

So, separate the whites from the yolks. Add a pinch of salt and 50 g of granulated sugar to the proteins, beat them into a fluffy foam with a mixer.

Add 5 tablespoons to the yolks. lukewarm water and remaining sugar, and whisk until thick white foam as well.

Gently add flour and baking powder to the whipped egg whites and stir. Then very carefully, not in a circular motion, but carefully turning the mixture over, add some of the proteins to the yolks. Stir and then add the rest of the proteins just as carefully. If you are not careful with this procedure, the biscuit will settle and not be fluffy.
